Brussels Sprouts in Balsamic Vinegar

Yes, I know what you think. For most of my life I would not touch brussels sprouts either. But that was due to the fact that they were cooked in such a bland way… Sorry Grandma!
But, it’s a totally different story if you caramelise them, by which you get the natural sweetness out of the veg. And, surprise surprise, balsamic vinegar goes so well with the Brussels sprouts, adding a proper kick to normally quite a bland vegetable.
It is a perfect side dish and an excellent addition to your daily intake of vitamin C, vitamin K and folic acid.

Ingredients
- 250g brussels sprouts
- 2 onions, peeled and chopped
- 3 tbsp. coconut oil or olive oil
- 3 tbsp. balsamic vinegar
- 2 tbsp. maple syrup
- Freshly ground black pepper
Method
1. Preheat the oven to 220°C
2. Peel the outer layers from the brussels sprouts. Trim the ends, and then cut the sprouts in half.
3. Melt the coconut oil in a frying pan and add the onions. Fry on a high heat stirring constantly for about 2 minutes, until golden. Turn down the heat, add the brussels sprouts and cook for another 5 minutes.
4. Stir in the balsamic vinegar and maple syrup and transfer to a roasting tray. Roast for 20 minutes, or until golden, tossing them once during that time. Serve warm with freshly ground pepper on top.
