Irish Soda Bread in Beans & Tomato Bake

This is probably more of a winter stew, but because it’s so delicious, I make it at any time of the year. All you need is to quickly make a simple green salad as a side, and your dinner is ready.

On top of this, beans are so nutritious that the latest dietary guidelines recommend we triple our current intake from 1 to 3 cups per week. High in fibre, antioxidants and low in sugar, they aren’t just good for the waistline, they may aid in disease prevention, too.

Ingredients


  • 2 large red onions, chopped
  • 4 garlic cloves, pressed
  • 2 large carrots, chopped (and peeled if not organic)
  • 1 red bell pepper, chopped
  • 3 tbsp. coconut oil (or rapeseed oil)
  • 1 tin kidney beans
  • 1 tin cannelloni or broad beans
  • 2 tins chopped tomatoes
  • 1 tsp. sweet smoked paprika
  • 1 tsp. cumin
  • 1 tsp. chili flakes
  • 1 tsp. rosemary
  • ½ tsp. cayenne pepper
  • 4-6 slices of the Irish Soda Bread, just enough to cover the baking dish
  • Freshly ground black pepper

1. Melt the coconut oil in a frying pan, add the onions and fry on a high heat constantly stirring for about 2 minutes, until golden.

2. Turn the heat to medium; add garlic, carrots and peppers and the spices. Fry for another 10 minutes, stirring regularly. Add the beans (with the juice) and tins of tomatoes and cook for another 10 minutes.

3. Transfer the beans into a large roasting tray. Cut the soda bread into slices, cover the beans evenly and paint it with a bit of rapeseed oil using a silicon pastry brush. Place in the oven and bake for around 20 min until the bread is nice and crispy.

4. Serve with a side green salad and enjoy!
