Horseradish Cream

I’m not really sure what to call this creation as it doesn’t really easily belong to any food category. It’s something between a dip, cream or spread cheese maybe? It’s got only three ingredients and it’s so damn delicious, provided you love horseradish 🙂 .

Ingredients
- 3-6 tbsp. peeled & grated horseradish*
- 225g cashews, soaked for 2h
- 150ml Oat Cream
Method
1. Place all ingredients in a food processor and blend until smooth. And voilà!
*Note
The amount of horseradish you use will depend on how spicy you like it plus what kind root vegetable you use. When I first made it with fresh horseradish, three tbsp. were almost overwhelming. But obviously horseradish root is a big vegetable therefore I used some and froze the rest. Once frozen it loses its strength therefore you will need to use more to get the same kick.
