The below trick is from the Vegan/Vegetarian Cooking School in Southwark. It only takes 2 minutes and makes the asparagus soft on the outside but still crunchy on the inside. Yum!
Cooking time: 2 min
- 200g asparagus
- 1 tsp. olive oil or plant margarine
- Pinch of salt
1. Place the asparagus into a cooking pot; add the olive oil and enough boiling water just to cover 1/2 of the asparagus, no more – you don’t want to boil it!
2. Put the pot onto a stove on high(est) heat with a lid on and cook, occasionally shaking the pot, for 2 minutes. If the asparagus is quite thick it might need another minute or so.
3. Serve warm with a pinch of salt to taste alongside your favourite main dish.
