Caramelised Rainbow Carrots


Who wouldn’t want to have a rainbow on a plate? This side dish takes literally 5 minutes to make, then you just stick it in the oven and voilà! Wonderful (& beautiful) addition to your plate; be it lunch or dinner. Best served with a dollop of hummus or tahini dressing.

  • 500g rainbow carrots
  • 3 tbsp. coconut oil or rapeseed oil
  • 3 tbsp. maple syrup
  • 2 tbsp. dried rosemary
  • Pinch of salt


1. Preheat the oven to 220° C.

2. Scrub the carrots under running water. Slice them lengthways in half.

3. Pour some melted coconut oil or rapeseed oil into a roasting dish. Add the maple syrup, rosemary & salt. Roast for 20 minutes or until golden.
